Rei-Shabu salad (Cold Shabu-shabu salad)

This Japanese Rei-shabu salad is highly recommended on the recent hot summer days. 
What is “Rei-Shabu”? It’s cold Shabu-shabu. 
It’s a very easy process of preparation and cooking and of course delicious.
In Yakuzen, pork is known as yin-nourishing food, meaning that it moistens your organs and skin, and helps you relieve fatigue caused by excessive heat. Also it is beneficial for constipation relief as well. 

All you do is cook sliced pork and put it on summer vegetables such as lettuce, courgette, cucumber, okra, and whatever you like.
You can use any salad dressing, but I recommend adding hot and pungent food/spices such as chili pepper and ginger.
 Lots of summer vegetables reduce heat in your body and by adding pungent/hot food, it can keep a good property balance.
My recommendation for the dressing is sesame & ginger dressing.

Ingredients

Sliced pork loin (Shoulder loin recommended)
1L cold water
1 tsp salt
3tbsp Sake

Summer veggies for salad - lettuce, sliced courgette, finely shredded cucumber, okra, perilla leaves
You can add cooked mushrooms. 

Dressing (2 servings) 
4 tbsp Ground white sesame seeds
4 tbsp Mayonnaise
2 tbsp Sugar
4 tsp Rice vinegar
2 tsp Soy sauce
2 tsp Sesame oil
1 tbsp Grated fresh ginger root

Methods

Step 1 - Put the cold water, salt and sake in a pot and bring to a near boil. Cook the pork meat in simmering water until it's cooked.
Step 2 - Drain the water and let it sit until it cools down.
Step 3 - Make a dressing. Put all the dressing ingredients in a bowl and mix.
Step 4- Dorape the veggies on a plate and meat, then pour the dressing on top.
