
Chicken stir-fry with Ponzu Oroshi Dressing is perfect for early spring
Do you ever feel like eating meat but want something that’s not too heavy? Chicken stir-fry with ponzu oroshi dressing is a perfect dish when you feel exactly like that.
Simply combine ponzu sauce (You can find it at Japanese supermarkets or Asian markets) with daikon oroshi, the grated daikon radish to create a delicious and refreshing dressing. Daikon radish sends stomach Qi downward and helps promote your digestion. When eaten raw, it has a cooling property, but when cooked, it changes to a neutral property, making it a good option even for those who are sensitive to cold.
You can also easily make homemade ponzu, which is convenient as it can be used as dressing for various Japanese dishes.
From the Yakuzen perspective, sour-flavored foods are associated with spring and are believed to benefit the liver when it becomes more active during this season. However, they may also restrict the growth and release of yang energy, so try to eat them depending on your body condition.

Ingredients (2 Servings)
400 g Boneless chicken thigh (cut into large bite-size pieces)
1 tbsp Soy sauce
2 tbsp Sake
1 clove Garlic (grated)
1/2 tsp Salt and pepper combined
5 tbsp Potato starch or cornstarch
200 g Daikon radish (grated)
7 tbsp Ponzu
1 1/2 tsp Sugar (Cane Sugar recommended)
20 cm Spring onion (chopped)
2 tbsp Olive oil
Method
Step 1 - Marinate the boneless chicken thigh pieces with soy sauce, sake, grated garlic and salt and pepper for 30 minutes.
Step 2 - Meanwhile, make the ponzu mixture (Combine the grated daikon radish, ponzu and sugar in a small bowl and mix until the sugar melts.)
Step 3 - Coat the marinated chicken in the potato starch (or cornstarch).
Step 4 - Preheat a wok or frying pan, pour the olive oil and heat it over medium-high heat. Then add the chicken and cook until browned on one side.
Step 5 - Turn the chicken over, put the lid on and cook over low-medium heat until cooked.
Step 6 - Once the chicken is cooked, remove the lid, add the ponzu mixture and stir gently. Turn the stove off.
Step 7 - Serve on a plate and sprinkle the chopped spring onion. Bon appétit!
