Bitter Melon and Pork Belly Stir Fry for preventing summer fatigue
Bitter melon is a popular summer vegetable in Japan these days and this great combination with pork is beneficial for preventing summer fatigue.
It clears excessive heat in your body, nourishes yin and moistens your body.
Ingredients
1 Bitter melon (around 20-25cm)
150g Pork belly
1 big sized Tomato
2 Eggs
2 tbsp Soy sauce
2 tbsp Sake
2 pinches Salt and Pepper
Methods
Step 1 - Cut the pork belly into 2cm cubes and put them in a bow. Add the sake, salt and pepper. Gently mix.
Step 2 - Cut the bitter melon in half lengthwise, remove seeds using a spoon and cut into 1cm slices.
Step 3 - Cut the tomato into 2cm cubes and beat the eggs.
Step 4 - Preheat the pan, add 1/2 tbsp cooking oil and warm the pan over medium heat. Pour the beaten egg and let it cook for 30 seconds. Remove the egg and put aside.
Step 5 - Clean and heat the pan, add the pork with no cooking oil and stir fry until it is cooked. Remove the meat.
Step 6 - Preheat the pan and add 1 tbsp cooking oil. When hot, add the bitter melon and stir fry for 2-3 min on medium heat.
Step 7 - Add the tomato and stir fry for 1 min on medium heat.
Step 8 - Put the meat back in the pan, pour the soy sauce down the side of the pan, and gently mix.
Step 9 - Put the egg back in the pan and gently mix and turn off the stove.
