One of the essential ingredients in Japanese cuisine is shiitake mushrooms. Dried shiitake, in particular, has been eaten since the Edo period, for making dashi, the Japanese cooking broth, and in dishes like Nimono, simmered foods.
When fresh shiitake mushrooms are dried in the sun, a compound called ergosterol transforms into vitamin D. The drying process also concentrates the umami flavor, boosts its nutritional value, and extends its shelf life. I highly recommend using dried shiitake to prepare Japanese dishes! And remember, don't throw away the soaking liquid when rehydrating dried shiitake — it’s packed with flavor!
